What's the reason for making an omelette with 3-4 yolks and 16 egg whites? Why not just use 6-7 whole eggs and be done with it? Is it because of concern of getting too much cholesterol?

Charles, i eat plenty of eggs with the yokes. People who eat well should not fret over cholesterol in eggs. Cholesterol is essential to human health. It manufactures hormones. It is only the people who treat their bodies like trash bins who need to worry about cholesterol consumption from eggs. Throwing away the yoke is simply a waster of money and effort in my view.

Thanks, Peter. I eat a lot of eggs. They are one of my favorite foods. I always thought throwing out the yolks was a big waste. I would just like to know what the rationale is behind it as that's what's in the recipe in the book. Why does Ori do it that way? I'm on a quest to learn and even though I don't plan on doing it that way, I still want to know why.

Well said Peter. Research as of late has shown that cholesterol in eggs is not detrimental as once thought. There is science behind the fact that eating eggs helps maintain a healthy HDL/LDL ratio.
