This is truly delicious!!! 

1 cup (200g) black-eyed beans
1 med onion
2 cloves garlic
2 med carrots
200g mushrooms
425g can tomatoes
1 cup (250 ml) tomato puree
2 tbsp chopped fresh basil
1 veg stock cube
2 tsp Worchestershire sauce

Topping
5 large potatoes (approx 1.25 kg)
30g butter
2 tbsp milk
1/3 cup 25g grated parmesan cheese
1/3 cup 80 ml cream

Soak beans overnight.  Drain, add to pan of boiling water & simmer, uncovered, approx 20 mins or until tender.  Blend or process half the beans, reserve remaining beans.

Shallow fry onion, garlic carrots & mushrooms until onions are soft.  Add undrained crushed tomatoes, puree, basil, crumbled stock cube, & sauce.  Simmer ucovered, about 10 mins or until vegetables are tender and mixture thickened slightly.  Stir in pureed beans and reserved beans & mix well.

Transfer to ovenproof dish, & cover with topping.  Bake in moderately hot oven until lightly browned & hot (approx 20 mins)

Topping

Boil potatoes until soft & drain.  Mash with butter, milk, cheese & cream, beating until smooth & creamy.  (Obviously you can leave out the cream & cheese if you wish to cut down on calories or fat content).

This one takes a bit of time but it's weeeeeell worth it!

Just a note from a former low carb person. You can replace the potatoes, or half of them with mashed cauliflower for a more anti-estrogenic dish and it would be very similar in taste.

Kellie, just curious about which low carb plan you followed. Cauliflower is an amazing vegetable and very good at somewhat disguising itself.  It also has the benefit of being lots cheaper than celery root.   I used to buy a lot of that too, but the prices were awful and the merchandise wasn't always that great.   I came home with a lot that were so woody as to be inedible.   Cauliflower was a much better choice.  This recipe does sound good, and for the time being, I'll be mashing the cauliflower again.   I'm really glad you are on the board now since we have low carb and Indian food in common!   Welcome, and please stick around. Grin

Thanks Mippy I really appreciate the Kudos!

I did Power Protein and lost a lot of weight, and maintained it for three years. Then my company switched insurances to a cheap HMO and since I was only borderline hypothyroid they took me OFF of the thyroid medicine I had been taking. A year later and 50 lbs heavier I began to realize that unless I did something drastic I was going to really blimp up.

So I got back on my lc diet, walked 3 miles daily and in six month lost a whopping 12 lbs...I was so discouraged. Finally learned about hormone balance did the testing and my nurse practitioner  who helped me get back on track told me about the Warrior Diet and specifically recommended the Anti-Estrogenic version of the plan to me. I can not tell you how thrilled I was...though I came to the table very skeptical at first. I still believe low carb is a good diet for many people, especially those who have diabetes, but after many frustrating years I was burned out and needed a change.

I have come to realize that I just feel better eating healthy carbs and that combination eating really is better for me...it also helps my body absorb the natural thyroid I am back on...

Your story is amazing.  I don't have thyroid problems that I know of, but I know it is a common problem with a lot of women.   Your story is really inspiring; you faced obstacles, looked for a way to solve your problems and did something about it.   Your courage,  optimism, and determination are terrific.   It will be something for me to keep in mind if ever I am tempted to take a day off or do something dumb!   Thanks for your story.

Kelly, thanks for your post.  So glad you're realizing that this really isn't some fad diet, but it's a way to find better health and quality of life.  Weight loss is just a wonderful side effect.
