Hello, I am going to be water fasting during my undereating phase.
Should I eat one big meal for my OE phase, or should I do the 4 hour window thing?

If you can fit the 1500-2500+ calories you need in one meal and feel comfortable doing that, and it's what you like doing, do that. If you cant, spread it out for however long you need to.
It's really up to you and what you can take, neither have any advantages or disadvantages over the other as far as I am concerned.

I am one month in and 16lbs down and I have to say at first I would just eat the one big meal but would find that a few hours later would get a huge craving and would want to go and grab a late night snack and then when I did would feel guilty but I began to see that even with the snack I was still losing weight!  So now I have adjusted my intake at my big meal to allow for a snack before bed time.

This diet works out perfect for me because the hardest part of dieting for me has always been after dark eating!

I consider the night meal the same as going to a buffet. When I go to a buffet at night I might eat for 1 1/2 to 3 hours.
