here's my incredble easy vegan/vegetarian chili.. made in a crock pot...
I buy all organic canned beans for convenence but you could certainly soak dry beans..
2 cans of black beans
1 can of kidney beans
2 small or one medium zuchinni cubed
1 small yellow squash cubed
lots of garlic chopped
1red jalepeno or other fresh chili pepper..what ever you like (how hot etc)
1/2 red bell pepper diced
1 1/2 cups frozen corn or 2ears of fresh corn cut from the cob
8 oz or so of crimini mushrooms
1 can of organic diced tomatoes (or 2-3 seeded and chopped fresh ones)
chili powder
cumin

heat about a tablespoon of olive oil in the bottom of the crock pot on high..when it starts to get fragrent add chopped garlic and the diced jalepeno..let saute
while thats working cut all your other veggies and open any cans.. dump in the fresh veggies, then all the canned stuff, add just enough water to cover..about 1/2 cup to a cup..
cover that with chili powder and cumin.. to taste.. add more when the veggies are almost done if needed.
put the lid on and let simmer on low for a couple of hours, stir occasionally. it's ready to eat when the squash is cooked through...
to make it extra tasty ..top with cheese and some sour cream or plain yogurt...and a few...crumbled corn chips if you like and chow down..
I some times add chunks of chicken or ground bison if I'm wanting meat.. but this stuff is so good on it's own you won't miss the meat at all..

I don't think turmeric goes in chili but to each his own.

My recipe uses meat, beans, tomatoes (usually canned diced), garlic, salt, chili powder, cumin, and oregano.

Ah yes - hence the very different taste and aroma to parsley! But parsley would do if the Scottish supemarkets are out of cilantro...
