Baked Italian Veggies

Warrior Goddess' Baked Italian Veggies
Broccoli
Carrots
Onion
Zucchini Squash
Green Beans
Mushroom
(other veggies that work well in this dish: eggplant, yellow squash, portobellos, asparagus)
Cut up the carrots, broccoli and zucchini in sticks. This gives you something to sink your teeth into rather than slices.
Spices: sea salt, pepper, garlic powder, oregano, fresh garlic cloves chopped
Sauce: Italian pasta sauce, olive oil
Put all in a large mixing bowl and add spices. Mix up evenly then put 1/2 in a pan and smother with pasta sauce, repeat with the rest and drizzle with olive oil.
Bake at 400 for 30-45 min
I never take measurements or time my food.... hey what can I say... I just follow my warrior instincts.
Serve hot and garnish with parmesan cheese. This is a good precursor to a protein or carb.

i did this dish last night and it was a hit, even my roomate ate some (miraculous) . you know how when you haven't been shopping in a while, and you have all these veggie odds and ends that need to either be utilized or tossed? most do stews when that happens, but im going to use this recepie from now on. i didn't use the same veggies, it was kind of a strange meddly, but it worked,, i always put a little extra spice to thing and wayyy too much cheese on top but hey,,,it worked. tanks WG

glad to hear it! A jar of pasta sauce can go a long way.
id love to see some of your curry recipes. you inspired me into curry again. i did a similar veggie combo even with cinnamon in the curry and they came out pretty exotic...cooked in coconut oil which goes well with curry spices.

oyiiii.........that would mean i would have to actually pay attension to what all i do when i cook. im like you in that, i tend to sling things around like a painter does with his palet, until i think its "done" and then .........walla,,,a supper. ill work on that WG
