I had some of this marinated salad from the health food store the other day and it was really good. I think this would make a great mid or late afternoon food or to eat during your feast meal. I found this takes almost no energy to digest. In fact I think the marinating and the vinegar even helps with digestion.

Marinated Vegetables

- 1 large glass jar with tight lid
- Cut up vegetables : cubed cauliflower, julienned carrots & onions, cubed celery, sliced olives
- Olive oil
- Red wine vinegar or rice vinegar
- Sea salt
- Black pepper

Put cut vegetables in glass jar, packed tight. fill 1/2 way with olive oil and 1/2 way with vinegar. dash of sea salt and pepper. cover tightly with lid and let stand in the refrigerator for a couple of days to marinate.

Spoon out and enjoy!

I know what you are talking about, I think it's called gardinia salad or something. but that stuff is absolutly great, and it falls under fermented foods which is a big plus in the WD.
