Maybe have it with some garlic or onion, or raw (in your salad with other vegetables) with your oil & vinegar dressing. You'll probably start to like it more after a while on this diet.

Can I use olive oil or macadamia oil in phase 1? If then, I can probably like it more...

Have you ever tried roasting the veggies with olive oil & garlic? It makes any veggie taste great!

I haven't done that but I'll give it a try - I'm going to give a broccoli soup a try today. Cauliflower I'm not sure about though. I love roasting bell peppers though.

There was a old atkins recipe that was called mock potatoes. It was steamed cauliflower in broth salt, pepper then mashed w/olive oil or a bit of butter and some form of cheese like parmesean or regiano. Its' delish in the original it called for cream but it sounds like on this diet you should delete that!

Try it and let me know how you like it, I'm a great cook and always have new ideas.

onions, garlic, broccoli, and/or cauliflower sauted in olive oil - awesome. make sure it's fresh, good quality produce. fresh high quality produce never tastes bad imo. i like it well cooked and kind off blackened sometimes for a change-up. been eating this for years.

I do know of a lovely Turkish dish for cauliflower - with sauteed onions, some mince and tomato made into a bolognese sauce and cook the cauliflowers with this. Good for Phase 3 I think but certainly not for Phase 1 and 2.  I love cooking but most of the recipes I know are for cooked dishes, not anything else.

I'm going to try the recipe tonight - I bought some squash as well, might try it with that too.

In life you have to accept the fact that you have to do things you don't like, if you wish to succeed.

For me, its eating the broccoli and cauliflower. I tried the recipe (the dressing is what I use for potatoes carrots and eggplant, I'd forgotten it) but no, I cannot eat it. I mean I did, but I felt like a 5 yr old who doesn't like their vege's  Embarrassed I forced myself to eat it, I think I prefer my broccoli steamed with a slight crunch, as for cauliflower, keep those recipes coming people. The squash was lovely with this dressing, very nice.

Does anyone ever cook their veggies in the pressure cooker?  It's so easy and quick.  I use mine all the time!

I have always steamed my veggies in the microwave with a lil broth, I usually use chicken but now with this plan I think one would need to switch to a veggie broth, it still has alot of flavor. With some spices and a lil cheese its' my favorite way to eat them. Try it, its' quick and easy, just cover it with saran wrap. You only need a tablespoon or two to do it.

Also there are some dishes from India that use cauliflower & curry that are great, I'll try to find out the name.

Yeah but I"m not sure how the spices would be for those dishes too - the lebanese have a cauliflower dish that's served as a side with a tahini dressing but its fried, I'll dig  up the recipe and post it up later.
