Quick, easy & delicious.

Tin chopped tomatoes
1 small onion
clove garlic
2 carrots
1 ltr good veg stock
75 g red split lentils
Salt & pepper
Oregano

Peel & chop vegetables and add to pan with lentils, tomatoes & stock.  Season, bring to boil, turn down heat & simmer for 20 mins.  Serve hot with parmesan cheese.  Enjoy!

That sounds easy and good.  I'm a spice lover so I'd also throw a few other things in, but this is a good basic, fast, easy one.   There are nights when I have very little time or inclination to cook, but this would be a big help.   Thanks.

Lentils are so great and easy to fix.  Unlike the other beans, you can have them nice and tender in 30 - 45 minutes, add some onions and garlic and tomatoes and whatever, and you've got an awesome, cheap and highly anti-estrogenic meal.
