This is another quick recipe that only takes about 1/2 hour to cook if you do it in a pressure cooker.  You'll have to refer to your own cooker instructions for cooking time for beans, and for the amount of stock you put in, or you can soak the beans overnight and put all the ingredients together, bring to the boil & simmer for 20-30 mins, til beans & rice are tender.  Adding a piece of Kombu to the pot will add nutrients and make the beans more easily digested.  Hope you enjoy.

8 oz (225g) dried black-eyed peas (beans)
1 pint good veg stock
Onion
Garlic (optional but better with)
Can tomatoes (you can use 1lb fresh - skinned & chopped)
40z brown long-grain rice
Salt & pepper
pinch cayenne (or other pepper for a bit of a kick)
chopped parsely

I also have a pressure cooker, and it's invaluable for days when I don't feel like fussing.  If anyone has never used one, there are lots of great things you can do with them, and they are not our mother's pressure cookers.  Mine is electric and so easy to use it amazed me. The new one totally safe.

My pressure cooker I use on the stove.  And I'm not scared of it.  My mother uses one all the time, but she puts that thing in the sink like it's a ticking bomb or something.  I think it's so funny.  Anyway, I agree "Mippy" - I love using mine.  Maybe I'll have to look into getting an electric one.
